The Catch-A-Tori Chicken

THE CATCH-A-TORI CHICKEN: Serves 8  

Catch-A-Tori Chicken This tasty one-pan dish is hearty and easy to share.



Ingredients:




3

slices turkey bacon cut into 1/2 inch pieces
2 large onions peeled and sliced into 1/4 inch slices
2 ribs of celery sliced into 1/4 inch slices
2 large garlic cloves peeled and thinly sliced
1 lb of white button mushrooms wiped clean and sliced into 1/4 inch slices
1/2 cup whole wheat flour
1/2 tsp. dried thyme
1/2 tsp. dried rosemary
1/4 tsp. black pepper
2 lbs boneless skinless chicken breast cut into quarters
1 1/2 cups low salt (low-sodium) chicken broth
3 Tbsp. tomato paste
1 16 oz can no-salt (no-sodium) diced tomatoes



Directions:

1 Pre-heat the oven to 375ºF.

2 Put the bacon, onions, and celery in an 11x13 inch pan and place in the oven.

3 Cook for 10 minutes, stirring twice until lightly crispy.

4 Add the garlic and stir.

4 Cook 5 minutes and stir in the sliced mushrooms.

4 Cook for 15 minutes.

4 In an airtight plastic storage bag, combine the whole wheat flour with thyme, rosemary and black pepper.

4 Add the chicken pieces and shake to coat. Remove from bag, shake off any excess flour and place in the baking pan with mushroom mixture.

4 Add the broth, tomato paste and diced tomatoes.

4 Stir to combine and cook 20-25 minutes until thick and bubbly. Chicken should be cooked through.

4 Serve with rice or pasta for a really hearty meal.
