Montana Magic Meatloaf

Montana Magic Meatloaf Serves 8  

Montana Magic Meatloaf Kick your meatloaf up a notch by using jalapeño. Bake in a bread loaf pan for an easy way to carry to your next Monday night party.



Ingredients:

Meatloaf


1/2 Tbsp.

canola oil
1 medium onion finely chopped
4 garlic clove finely chopped
1 medium jalapeño finely chopped
1 medium red bell pepper finely chopped
1/3 cup tomato paste
1 Tbsp. chili powder
1 tsp. cumin
1/4 tsp. cayenne pepper
1/2 lb lean ground turkey (93 percent)
1 1/2 lb lean ground beef (95 percent)
1/2 cup whole wheat bread crumbs
1/2 cup fat-free milk
non-stick baking spray


Salsa

plum tomatoes cored, seeded and chopped
6 scallions finely chopped
2 jalapeños seeded and finely chopped
1 garlic clove finely chopped
1 lime juice (about 2 tablespoons)
1/8 teaspoon salt (sodium)




Directions:

Meatloaf

1 Pre-heat oven to 350°F.

2 In a large non-stick skillet, heat the canola oil over medium-high heat.

3 Add the onion, garlic, jalapeño and red bell pepper. Cook 8-10 minutes stirring occasionally until vegetables are soft.

2 Add the tomato paste, chili powder, cumin and cayenne pepper. Stir to combine. Remove from heat and allow to cool.

2 In a large bowl combine the ground turkey, ground beef, bread crumbs and fat-free milk.

2 When the vegetable mixture has cooled, add to the combined meat mixture.

2 Spray a 9x5 inch bread loaf pan with non-stick cooking spray. Shape the meatloaf to fit the pan and bake in the middle of a pre-heated oven for 1 1/2 hours.

Salsa

1 Combine the tomatoes, scallions, jalapeños, garlic, lime juice and salt in a bowl and mix.

2 Serve with the meatloaf.



Serving size:
1 1/4 inch slice and 1/3 cup of salsa per serving
