| In-The-Pocket Pita Burgers |

These fun mini turkey burgers are topped with savory mushrooms, onions and peppers for a perfect bite-size snack. |



Ingredients:

 1 3/4 lb |
 |
 lean ground white turkey meat |
 |

|
2 |
|
large cloves of garlic minced |
 |
|
|
1/4 cup |
|
chopped fresh parsley |
 |
|
|
1 tsp. |
|
dried oregano |
 |
|
|
1/2 tsp. |
|
paprika |
 |
|
|
1/2 tsp. |
|
cumin |
 |
|
|
1 tsp. |
|
lemon zest |
 |
|
|

|
egg |
 |
|
|
1 |
|
egg white |

|
|
|
non-stick cooking spray |

olive oil |

large onions peeled and sliced into 1/2 moons |

bell peppers of varying colors cored, seeded and sliced into 1/4 inch slices |

1 16 oz package |

white button or Crimini mushrooms wiped clean and sliced |

large leaves green leaf lettuce |

medium-size whole wheat pita cut in half |

Directions:

In a large bowl mix the ground turkey, garlic, parsley, oregano, paprika, cumin, lemon zest, egg and egg white.

Mix well with a spoon or your hands.
|
 |
Line a baking sheet with parchment and form 16 - 2 1/2 inch patties.
|

Place in the refrigerator 15 minutes or until ready to cook.
|
 |
Heat the olive oil in a large nonstick skillet over med-high and add the onions and peppers. Cook stirring occasionally for 8 to 10 minutes or until the onions begin to caramelize. Add the mushrooms and continue to cook 5-7 minutes more or until the liquid starts to evaporate.

Cook 3-4 minutes more until all the liquid is gone and the vegetables are soft.

Heat a grill or grill pan over medium high heat. Spray lightly with non-stick cooking spray.
|
 |
Cook the turkey patties about 3-5 minutes per side until all the patties are cooked through.
|
 |
Take one pita half and place one lettuce leaf, 2 turkey patties and about 1/2 cup of the vegetable mixture per serving.
|
